Oyster mushroom stems are harder to bite than the mushrooms itself. Often they stay behind at the farm. In the Netherlands that is about 305 ton per year. Doreen Westphal thought ‘What a shame’. She makes delicious products like sausages and Choonk – grilled umami pieces made from rescued oyster mushroom stems. And it all started with growing on coffee grounds at home.
